- Is the OO style vat or the horizontal vat a better fit? The choice between the Double O style cheese vat and the horizontal vat often comes down to the cheesemaker’s preference. The horizontal vat is a popular choice in the U.S., where outside the U.S. the Double O vat is common. However, the horizontal cheese vat seems to be becoming a widespread favorite worldwide.

OO Style Cheese Vat
RELCO’s® OO Cheese Vat is designed to produce the highest quality of curds and whey for cheese producers. The Double O cheese vat is flexible to many different varieties of hard and semi-hard cheese, and allows for more manual intervention. It has a dimple jacket heating surface, produces cheese with fat content from 10% to 60%+, and has an integrated whey pre-draw.
